Recipe: Spinach Salad with Turkey

Recipe: Spinach Salad with Turkey By Kathy Smith, 
creator of Kathy Smith's Project:YOU! Type 2® 
High in protein and low in calories, this simple salad is
perfect for lunch or dinner. Feel free to mix things up
by adding your favorite crisp raw vegetables,
or replacing the turkey with fish, chicken,
or the vegetarian protein source of your choice!

Salad:

  • 8 oz. leaf spinach, washed and stems removed
  • 1 small red onion, peeled and finely sliced
  • 1 tomato, diced
  • 1 cup sliced fresh mushrooms
  • 12 oz. cooked turkey breast meat, cut in bite-sized pieces

Dressing:

  • 4 Tbsp. orange juice
  • 2 Tbsp. red wine vinegar
  • 2 tsp. olive oil
  • 1 or 2 small garlic cloves, peeled and minced
  • 1/4 cup grated Parmesan cheese

Place all dressing ingredients in small bowl. Whisk together and set aside. In a large bowl, combine all salad ingredients. Drizzle with dressing and toss gently. Serves 4.
Preparation Time: 15 minutes

Recipe: Sushi

Sushi Recipe
from Sue K.'s Kitchen
Sauce for Rice:
1 cup rice vinegar
1 cup sugar
2 teaspoon salt
Mix until sugar and salt melts into vinegar.
Cook rice. Put into a bowl to cool off. Add vinegar sauce until you think it tastes good.
Use a couple of cans of tuna (drain oil or water) and cook with sugar and shoyu until desired taste. Scramble a couple of eggs. Cut eggs into small cubes. Peel 2-3 carrots, grate, and pour vinegar sauce into carrots.
To make the sushi rice:
Cut up some nori and put on bottom layer
Add some seasoned rice
Cut up more nori- put on top of rice
Add half of the seasoned grated carrots
Add half of the tuna
Add the seasoned grated carrots
Then make a second layer with the same things
Add some grated shrimps to add color

Recipe: Apple-Raisin Coffee Cake

Got relatives staying with you over the holidays? Here's an easy breakfast recipe (from Kelly C.'s kitchen), chock-full of healthy fruit and nuts, that'll serve a small army.
APPLE-RAISIN COFFEE CAKE
5 cups cored, peeled, and chopped apples
1 cup raisins
3/4 cup brown sugar
1/3 cup chopped walnuts
1/4 cup extra-virgin olive oil
2 tsp. vanilla
1 egg, beaten
2-1/2 cups whole-grain flour
1-1/2 tsp. baking soda
2 tsp. ground cinnamon
Olive oil cooking spray
13" x 9" x 2" baking pan
Large mixing bowl
Preheat oven to 350 degrees. Lightly spray a 13" x 9" x 2" baking dish or pan with cooking spray. In a large mixing bowl, combine apples, raisins, sugar, and walnuts, and mix them together well. Allow mixture to stand for 30 minutes. Then stir olive oil, vanilla, and egg into mixture. Sift flour, soda, and cinnamon together, then slowly stir into apple mixture, making sure it stays moist. Fold mixture into pan and bake 35 to 40 minutes, or until toothpick inserted in center comes out clean. Let cool slightly before serving. Makes 20 servings.

Cook Time: 35 to 40 minutes

Recipe: Mama's Tacos

From Aunt Sue K.'s Kitchen:

Mama’s Tacos
(serves 2-4, makes 6-8 tacos)
1/2 lb. hamburger
1 small onion (diced)
1 can tomato paste or sauce (small)
tortillas
Garnishes: cheese, lettuce, tomatoes, etc.
Cook hamburger and diced onion. Drain off oil. Add paste or sauce. Cook for another minute or two to blend. Warm tortillas in frying pan (NO OIL). Heat 1 minute on each side. Fill with 2 heaping teaspoons of filling. Garnish with cheese, lettuce, tomatoes, etc.

Fall Treat= Apple Crumble

Because today is November 1 and rainy and cloudy this morning, it feels especially like a Fall day. And what a wonderful way to celebrate fall than with a tasty treat. Kelly C. wanted to share this healthy dessert recipe that is a favorite for this time of the year. So without further ado, here it is.......ENJOY!!!


Healthy Apple Crumble:

1 c oats
1/2 c wheat flour
1/2 c flour
1 c brown sug
1 1/2 t ground cinn 
1/4 t salt 
1/4 c froz apple-juice concentrate,
2 T oil (maybe applesauce or 1/2 of each?)
6 c apples.
Heat oven to 350°. Put oats on baking sheet and bake until browned 15 to 18 min. Grease 2 Qt dish.Combine oats,wheat flour,flour, brown sugar,cinnamon,salt,apple-juice concentrate,oil in a bowl. Put apples in baking dish. Put mixture over apples bake 35 to 40 minutes.

Recipe: Bottle Lebanese Cucumbers (Pickled Cucumbers) from Elizza K.


4kg. cucumbers sliced (1 kg. = 2.2 lbs)
1 kg. onion diced finely
Mix cucumbers and onion together & sprinkle with 3/4 cup salt
Add 4 trays of ice cubes & cold water to cover & stand for 3-4 hours
Wash twice with clean cold water
Boil together:-
4 cups vinegar
4 cups white sugar
1 tsp. Turmeric
1 tsp. celery salt
1 tsp. mustard seeds
Bring to a boil. Continue to boil for 5 mins. (until sugar dissolves)
Put cucumber mix into clean jars
Pour vinegar & sugar mixture into jars. Screw lids tight. Should hear a pop when sealed.
